Future Days Prosecco 2025

A chance request from one of Melbourne's top hospitality groups led us down the Prosecco path in 2024. After trying to find some fruit at the local pub, we were introduced to Mick and Tanya De Fazio, growers from the Alpine Valleys whose commitment and attention to detail blew us away. The rest, as they say, is history.

This is not your bulk standard Prosecco from a tank farm, which have sadly become all too familiar. It is hand-bucketed fruit, pressed in small batches in our 500kg press and fermented in 1000L vessels in our shed on the hill. It is Prosecco with character, fresh orchard fruits with a lovely savoury almond skin complexity. Delicious, super versatile and with plenty of interest.
